Recipe: Apple slaw (Vegetarian)

Apple slaw was the first thing that came to mind when I was choosing what to make to compliment the sticky pork ribs. In fact, slaw (also known as coleslaw) goes well with almost all types of meat (esp from the BBQ or grill) and fried chicken.

Slaw is made primarily from shredded raw cabbage and dressed in mayonnaise and cider vinegar. I chose to use both white and red cabbage for a color contrast as well as Granny Smith apples, walnuts, raisins and cranberries. Doesn't it look festive?


Appealing, tart and appetizing, this definitely went well with the pork ribs. You can use low-fat mayonnaise for a healthier version.



Apple slaw (coleslaw)
Recipe by Baby Sumo
Preparation time: 15 minutes
Serves 4

Ingredients
1 Granny smith apple, cut into fine matchsticks
2 cups white cabbage, thinly sliced
1 cup red cabbage, thinly sliced
1/2 cup walnuts 
1/4 cup raisins
1/4 cup dried cranberries

For the dressing
1/2 cup low-fat mayonnaise
1 1/2 tbsp cider vinegar
1 tbsp caster sugar
Salt and freshly ground pepper, to taste


1. In a bowl, place the mayonnaise, cider vinegar, sugar, salt and pepper and mix well. Add the apple, cabbages, walnuts, raisins and dried cranberries and stir until well incorporated. Season with more salt and pepper, as necessary and serve.
