Mixed vegetables with 3 types of braised mushrooms
Usually, we will stick to vegetable dishes and avoid mock meats. Mixed vegetables is a popular dish since it symbolises family harmony. I used a mix of broccoli, celery and carrots as well as 3 types of mushrooms - Shitake, enoki and abalone mushrooms. This dish is absolutely heaving with good, auspicious meanings - carrots symbolises good luck, Shitake mushrooms symbolises longevity, enoki mushrooms, also known as golden needle mushroom represents "gold" and abalone's homonym is absolute prosperity.
This was actually my first time using abalone mushrooms. I saw it in the supermarket and thought it would be great in this dish. It has a thicker, meatier texture when compared to oyster mushrooms, and surprisingly my husband likes this poor man's abalone more than the real McCoy. For flavouring, we used the vegetarian mushroom sauce, which works just like oyster sauce to season the dish.
This is really delicious and something I would not mind having during our everyday meals.

Mixed vegetables with 3 types of braised mushrooms

Preparation time: 10 - 15 minutes
Cooking time: 40 minutes
Serves 3-4
Ingredients
1 broccoli, cut into florets
1/3 carrot, sliced thinly
2 stalk celery, sliced thinly
2 cloves garlic, finely chopped
3-4 tbsp water
1 tbsp mushroom sauce
For the braised mushrooms
1 tbsp vegetable oil
2 cloves garlic, finely chopped
100g abalone mushrooms, cut into thick slices
1 pack enoki mushroom
8 dried Chinese mushrooms, soaked for 1 hour and stalk removed
2 tbsp mushroom sauce, or more to taste
400ml water
1. Start by braising the mushrooms. Heat oil in a small pot/saucepan over medium high heat, add the garlic and then fry for 1-2 minute until lightly browned. Add the Chinese mushrooms and stir fry for another minute. Then, add the water and bring to the boil. Once boiling, lower to medium low heat, add the mushroom sauce and simmer for 20 minutes or until the sauce has reduced to half.
2. Add the abalone mushrooms and cook for a further 5 minutes. Add the enoki mushrooms and cook for a further 2 minutes. Taste, and season with more mushroom sauce as required.
3. Meanwhile, you can cook the vegetables in a separate wok at the same time as Step 2. Heat oil over medium high heat, and then add garlic and fry for 1 minute until fragrant. Add the broccoli, celery and carrot as well as water and allow to cook for 2 minutes or until vegetables are cooked. Season with mushroom sauce.
4. To serve, carefully arrange vegetables on serving plate with braised mushrooms in the centre. Pour over sauce from braising mushrooms and serve immediately.
