Recipe: Braised fish maw with mushrooms and sugar snap peas

Nowadays, you can get Chinese New Year (CNY) ingredients at the shops two months before the actual celebration. We always stock up on lots of fish maw 鱼鳔 and Chinese mushrooms as soon as we can get our hands on them.  So, we've been cooking lots of different dishes with them and our favorite combination has to be this - braised mushrooms with fish maw and sugar snap peas.



This recipe is even EASIER than my last "Easy fish maw with mushroom stew" recipe - you pre-soak them in warm water for 2 hours hence you can cut the cooking time by half. Usually we soak it before we pick the kids up from school, hence when we get back, we can quickly braise it and the dish is ready in less than 30 minutes. A complete one-pot dish with enoki mushrooms (also known as straw mushrooms), Chinese mushrooms and sugar snap peas. Super tasty!




Braised fish maw with mushrooms and sugar snap peas
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Serves 2-3


Ingredients
2 cloves garlic, finely chopped
1 tbsp cooking oil
1 cup dried Chinese mushrooms, soaked for 2 hours and stalk removed
1 (25g) fish maw, soaked in warm water for 2 hours
2 pack enoki mushrooms, ends trimmed
130g sugar snap peas / sweet bean, topped and tailed
250ml water
2 tbsp mushroom sauce
1 tbsp ginger wine


1.  In a saucepan, heat oil over medium high heat. Add garlic and stir fry for 2 minutes until golden brown.

2. Add Chinese mushrooms and fish maw and stir fry for about a minute, then add the water and bring to the boil. Once boiling, turn down to medium low heat and simmer for 15-20 minutes, until the fish maw's texture is cooked to your liking. Season with mushroom sauce and ginger wine, to taste.

3. Add the enoki mushrooms and sugar snap peas and cook for a further 2 minute. Taste and season with some salt, if required. Serve immediately.

Note: Soaking the fish maw in hot/warm water will shorten its cooking time, convenient especially if you are in a rush.

Recipe: Honey Cornflakes Cup

This week, I have been baking lots of pineapple nastar rolls... about 400 of them, all nicely packed to be gifted to good friends as well as serving to guests visiting us during the CNY period. My kids will also be bringing some to school for their CNY party - my daughter brought some to school the other day, which she shared with two of her best friends, and they have been asking her to ask her mummy to let her bring more during the party. :D



Other than pineapple tarts, I also made these honey cornflakes cup for them to share with their classmates. I chose this because it's really easy to make and kids love them! This is based on my almond honey joys recipe but this time I've cut out the sugar completely, using only honey and butter and then mixed in some chocolate chips and almond flakes. Oh and topped it with a heart since it's Valentine's Day on Saturday ;)



Crispy, crunchy and sweet - hope the kids will enjoy their treats in school.




Honey Cornflakes Cup
Recipe by Baby Sumo, adapted from here
Preparation time: 15 minutes
Cooking time: 10-12 minutes
Makes 28-30


Ingredients
150g salted butter
6 tbsp honey
A pinch of salt
8 cups cornflakes (500g)
1 cup almond flakes
2 tbsp chocolate chips


1. Preheat oven to 170°C (no fan). Line 2 muffin trays with paper cases. 

2. In a saucepan over medium low heat, melt butter, honey and salt until it is bubbling. Remove from heat and stir in cornflakes and almonds until well coated. (Note: You can do it in 2 batches for ease of handling)

3. Spoon cornflakes mixture into paper case lined muffin pans, then sprinkle with chocolate chips.

4. Bake in preheated oven for 10-12 minutes or until golden. Cool completely in pans before serving. Store in airtight containers to keep them crispy and crunchy.


Note: If you're making these for CNY, you can make them in mini muffin cases and bake for 6-7 minutes.

10 Restaurant Quality Recipes for Valentine's Day

Valentine's Day is just around the corner. Have you got anything planned? If you're planning on cooking your loved one a romantic meal at home, here are 10 restaurant-quality recipes you can easily recreate at home. Guaranteed to impress ;)

1. Ham and rock melon
This is popularly served as a starter in Spanish or Italian restaurants, we had this numerous times while we were holidaying in Marbella.

To make this, no cooking skills are required. All you need to do is buy a rock melon and good-quality Jamon Iberico or Jamon serrano or Prosciutto. Cut the melon into slices and drape the Prosciutto over it. You can also make them into canapes (recipe here). Lovely with a glass of champagne.





2. Pan seared scallops with cauliflower puree and bacon crumble
This is my favorite scallop recipe, which I have cooked many times in my humble kitchen for my man. Not only does it taste fantastic, it looks really great on the plate too. A sure-fire way to impress your date, yes?




3. Chunky mushroom soup with truffle oil
Who doesn't like mushroom soup, especially when it's made with several different types of mushrooms and then finished off with a drizzle of truffle oil. You can make this early in the morning and then just reheat before serving.




4. Tenderloin steak with pumpkin mash
Steaks are incredibly easy to cook at home. You can also use rib eye or sirloin (these will not require a meat thermometer) - simply cook a 1 inch steak for 2 minutes each side for medium rare doneness.



5. Spaghetti with zucchini and king prawns
If your other half is a fan of Italian cuisine, make this pasta dish and reenact that kiss scene from "Lady and the Tramp". ;)



6. Risotto with scallops, asparagus and bacon bits
Another great Italian dish to recreate at home is risotto. It does require a little more effort, but nonetheless a simple dish to make. Creamy, rich and comforting, your other half will be most impressed and give you an A+ for your effort and the love that goes into making that risotto.



7. Roast lamb loin chops with rosemary and fries
Go to the supermarket and get 4-6 lamb loin chops and a packet of frozen fries and pop them in the oven. In 20 minutes or so, dinner is ready! How is that for easy?



8. Strawberry mille-feuille
Mille-feuille is an elegant and impressive-looking dessert. But guess what, it's soooooo easy to make. Plus Korean strawberries (the best kind!) is in season right now.




9. Passion fruit meringue
Meringues can be made ahead of time (ie make them the evening before) so all you have to do on Valentine's Day is to whip some cream and scoop out the passion fruit onto the meringue. More time to spend with your love!



10. Chocolate brownies with vanilla ice cream
Chocolate is considered as a powerful aphrodisiac, so you can't go wrong with chocolate brownies on Valentine's Day. Another dessert you can make the evening before, top it with a big scoop of vanilla ice cream and you have a winner!

Recipe: Pork knuckle/trotters with black vinegar 猪脚醋

Pork knuckle /pig trotters are popular ingredients used during Chinese New Year (CNY). When I was dining at a Chinese restaurant last month, I was flipping through their CNY promotion booklet and saw a pork knuckle dish. I asked the waitress why pork knuckle is served during CNY and she told me that it's because it symbolises a hand clawing in more "gold and money" for the coming year. Chinese sure loves ingredients with prosperous sounding homonyms and symbolism.

The Hokkiens, including my family usually serve pork knuckle with sea cucumber (recipe here) during CNY. I read in an article last week that Hakka households serve pork knuckle cooked with black vinegar 猪脚醋 during reunion dinners, which in the dialect means "soaring high". Though I've never had it before during CNY, this was one of my favorite things to eat during confinement (confinement is the 30-day period an Asian woman undergoes after giving birth).


Pork knuckle / trotters with black vinegar 猪脚醋


To cook this dish, you can use either pork knuckle or pig's trotters (I love pig trotters, as they're more gelatinous- yummy!), which is simmered with water, old ginger, gula melaka (palm sugar) and vinegar. How long you cook it depends on how you like the texture - for us, we like the pork trotters to be soft with a slight bite and melting layers of gelatinous fat within. It is best to set it aside for 4-5 hours for the flavours to develop before serving. You can always cook a big pot, and eat it over a few meals - the flavours just get better and better!




I simply love the combination of sweet and tangy flavours of the braising sauce (yup, you can drink it all) - so appetizing! I'm so happy that my mum taught me how to cook this chu kiok cho 猪脚醋 dish. Thanks mum!




Pork knuckle/trotters with black vinegar 猪脚醋
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 2 hours
Serves 4

Ingredients
1kg pork knuckle or trotters
320g old ginger, sliced and bruised
900ml water
400ml spiced vinegar
135g gula melaka (palm sugar)
1/2 tsp salt


1. In a large pot over medium heat, place the water, old ginger and gula melaka and bring to the boil. Simmer for about 10 minutes. Add the vinegar and simmer for a further 10 minutes.

We use Yuen Chun Cap Datuk spiced vinegar (cuka hitam) when we make this dish.



2. In a separate pot, bring a pot of water to the boil, then blanch the pork for about 5 minutes. This is to remove any impurities from the pork.

3. Add the pork and salt to the pot (from Step 1) and simmer over low heat for 1 1/4 to 1 1/2 hours. Remove from heat and set aside for 4-5 hours for flavours to develop/infuse.

4. Before serving, heat over medium low heat for about 30 minutes.

Note: Use old ginger for this dish as it tastes better with a strong gingery taste.

Recipe: Stir fried leeks with Chinese mushrooms and king prawns

It's finally February, which means that Chinese New Year is just 18 days away! Woohooo! This month, I will be hosting Cook and Celebrate: CNY 2015 with two wonderful ladies, so do submit and share any CNY recipes you have with us.

To kick-start this event, I'm sharing an auspicious dish, fit to be served at your dinner table throughout the CNY period. Leeks 蒜 are commonly served as the name is a homophone for "calculating (money)" (算suàn), mushrooms 冬菇 mean longevity and prawn 虾 sounds like laughter "ha ha ha". Last year, we cooked a similar dish with dried shrimps , but this week we bought some really nice, fresh and juicy king prawns so it went into this dish.




Such a simple, delicious dish - the kids got their hands (and mouths) on all the prawns as soon as I finished with the photo taking.

Here's to more money, longevity and happiness in the Year of Goat. :)







Stir fried leeks with Chinese mushrooms and king prawns
Recipe by Baby Sumo
Preparation time: 10 minutes
Cooking time: 8-9 minutes
Serves 4

Ingredients
350g leeks (4 stalks), trimmed and sliced into 2" lengths at an angle
2 cloves garlic, finely chopped
2 tbsp cooking oil
3 Chinese or shitake mushrooms, rehydrated and sliced thinly
12 king prawns, shelled and deveined with tails intact
1 tsp ginger wine
1 tsp chicken stock granules


1. In a wok, heat oil over medium high heat. Add garlic and fry for 2 minutes, until lightly browned. Add mushrooms and stir fry for a minute.

2. Add the leeks and stir fry for about 1 minute, then add the ginger wine and allow to cook for a further 2 minutes. Add the king prawns and cook for 1-2 minutes, until prawn are cooked through. Season with chicken stock granules and serve immediately.

Note: For those who cannot take alcohol, you can omit ginger wine completely or replace with ginger juice (grate and squeeze).

Recipe: Pesto Pasta with Oven-Roasted Chicken

I've said it before and I'll say it again - it's amazing having a herb garden at home. Furthermore, my kids love eating herbs, be it raw (straight from the plant) or used in our cooking.

One of our favorite herbs from the garden is sweet basil, which we love making pesto with. Don't worry though if you do not own a basil plant, you can always get a pack of basil at the supermarket for under RM2 and make this.


Pesto Pasta with Oven-Roasted Chicken


Making pesto is super simple, especially if you are using a food processor. Just place everything in there and blitz until you get a paste. To make our dinner more substantial, we served our pesto pasta with oven-roasted chicken. You can also use a grill pan to cook it, though using the oven would be less messy. We use chicken breast as it's leaner and healthier, but equally delicious!




Pesto pasta is one of my kid's favorite pasta so they were delighted to see this at the dinner time. Loved the marinade for the chicken, making the chicken really tasty and tender. This recipe is a keeper, one I would be making over and over again! :)

Pesto pasta with oven-roasted chicken
Recipe by Baby Sumo
Preparation time: 15 minutes
Cooking time: 20 minutes
Serves 4


Ingredients
2 quantity homemade pesto (recipe here)
300-350g dried spaghetti
Salt and freshly ground pepper

To garnish
Parmesan cheese, freshly grated
8-10 cherry tomatoes, halved
A handful walnuts
Basil leaves, roughly torn
Extra virgin olive oil

For the chicken
1 boneless, skinless chicken breasts
1/2 tbsp cooking oil

For the marinade
1 clove garlic, crushed to a paste
1 large pinch of salt
1 tbsp olive oil
Juice of 1/4 lemon
1 tsp whole cumin seeds, roughly ground
1/2 tsp smoked paprika


1. First, clean the chicken breast and then cut each piece into half lengthwise and crosswise. This will cut down cooking time. Place marinade ingredients in a bowl, and mix well, then rub all over the chicken breasts and leave to marinade for at least 2 hours in the fridge.

2. To make the pesto: please refer to recipe here. You can place all ingredients in a food processor to save time. Once the pesto is ready, set aside in the fridge with a covering of olive oil.



My kids always have fun making pesto at home!


3. For the chicken:
To cook in oven: Preheat oven to 200°C (roast mode). Line the baking tray with foil, and brush lightly with oil. Then place marinated chicken on the tray in a single layer. Roast in preheated oven for 12-15 minutes, until cooked through. Season chicken with more salt, if necessary.

To cook on hob: Alternatively, heat 1/2 tablespoon of oil in a large grill pan over high heat. Once the pan is hot, place chicken down, and turn heat down to medium heat. Cook the chicken breasts just until golden brown and cooked through, about 5-6 minutes each side. Season chicken with more salt, if necessary.



4. To prepare the pasta: Cook the spaghetti in a large pot of boiling salted water over medium high heat until al dente, stirring occasionally to prevent it from sticking, about 8-10 minutes. Drain the spaghetti and place in a large bowl. Then add the pesto and toss to coat. Add some olive oil (about 1 tbsp) if it seems a little dry.

5. To serve: Using a two-pronged carving fork, swirl some of the pasta around the fork. Slide the pasta off the fork and mound it in the center of a plate. Repeat for each serving.  Cut each chicken breast on a slight diagonal into 6-8 thin slices. Arrange the chicken slices alongside the spaghetti.

6. Garnish with the cherry tomatoes, shaved Parmesan cheese,  walnuts and torn basil leaves.


(Note: We do like our pasta with lots of pesto, however if you're having this for the first time, try with 1 quantity pesto and gradually add more to your liking).

Recipe: Avocado Salad with Anchovy & Egg

Avocados, love 'em or hate 'em? I definitely am on the LOVE side. I could eat them everyday. So much so, that I decided to try my luck and plant an avocado tree so that I can have endless supply of avocados. So far it's around 80cm tall but I heard it takes about 10 years before it fruits, so wish me luck! ;)

A friend saw me posting lots of photos of avocado salads and said to me "what avocados should I buy cos all the ones I had in the past weren't really nice." Over here, you can get South African, New Zealand, or Australian Hass, and in my experience, the Australian Hass are consistently good. After that piece of advice, I got a Facebook message from my friend thanking me for the tip. Definitely my pleasure.. yet another avocado lover is born!

So here's another avocado salad from my kitchen. Hubby bought me a jar of anchovy fillets in olive oil when we were doing our Christmas shopping (in case I needed it someday) so I decided to add it into my avocado salad. The salad consists of 1 ripe avocado, cherry tomatoes, some butterhead lettuce leaves, boiled egg and anchovy fillets (best to mash it up and spread it around the salad as it's quite salty if you try eating a whole fillet on its own).

I do love how the saltiness of the anchovies complimented the rest of the salad. And this definitely bodes well with meeting my weight loss target for 2015.





Avocado Salad with Anchovy & Egg
Recipe by Baby Sumo
Preparation time: 5 minutes
Cooking time: 10 minutes (for egg)
Serves 1 or 2 as side salad


Ingredients
1 ripe avocado
1/4 lemon or 1 calamansi lime
3-4 cherry tomatoes, halved
4-5 butterhead lettuce leaves, halved
1 boiled egg, quartered
2-3 anchovy fillets in olive oil, light mashed
1 tsp olive oil from anchovy fillet jar (optional)
Salt and freshly ground pepper


For the dressing
1 tbsp extra virgin olive oil
1/2 tbsp white balsamic vinegar
Salt


1.  To pit the avocado, first you need to find the stalk and remove it. Hold it horizontally, with a knife through the centre until you hit the seed then move the knife in a circular motion until you go all the away around. Twist the avocado halves in opposite direction and it will come apart easily into 2 halves. Sink the knife into the avocado seed and remove. Peel off skin. Squeeze lemon juice (or calamansi lime juice) all over to avoid discoloration. Chop the avocado into bite-sized chunks. Season with salt.

2. In a bowl, place olive oil and balsamic vinegar and whisk well. Season dressing with salt.

3. Arrange lettuce, avocado and tomatoes in bowl, then drizzle over dressing. Top with boiled egg and anchovies. Drizzle over the olive oil from anchovy fillet, if using. Ground some black pepper and serve.
