Recipe: Fast fast udon (Udon with Pork Mince, Beansprouts and Mushroom)

Hubby asked what I was making him for lunch one afternoon and I answered, "Fast fast udon." "Why is it called fast fast udon?" he asked, to which I replied, "Well, it's fast to make, and it tastes so good, you'll finish it real fast too!"


Fast fast Udon with minced pork, beansprouts and mushroom

Since there was not much prep to do for this dish, I managed to get this cooked and ready on the dining table in under 10 minutes. And it was so good, we took under 5 minutes to finish it all up. Definitely lives up to its name ;) I used pork mince for ease, but you can substitute with chicken or beef if you prefer. Not only is it fast to prepare, it is also a healthy and well-balanced dish.


Fast fast Udon (Udon with minced pork and beansprouts)

Preparation time: 2 minutes
Cooking time: 6-7 minutes
Serves 2

Ingredients
200g fresh udon
80g minced pork
4 cloves garlic, finely chopped
2 Chinese mushrooms, sliced thinly
2 tbsp cooking oil
200ml water
1/2 tsp dark soy sauce
1/2 tsp ginger wine
1 tbsp light soy sauce, to taste
3 spring onions, cut into 1 inch lengths
2 handful beansprouts
A dash of sesame oil

1. In a large wok or frying pan over medium high heat, add oil and garlic and cook for 1 1/2 minutes until lightly browned. Add Chinese mushrooms and minced pork, and stir fry for about 2 minutes, until pork is cooked through.

2. Add water, ginger wine, dark soy sauce and light soy sauce, and bring to the boil. Once boiling, add the udon noodles and cook for 2-3 minutes, until the noodles are cooked. Taste the seasoning, then add the beansprouts  and spring onion and stir fry for another 30seconds. Add a dash of sesame oil, stir and remove from heat.

3. Serve immediately.
