Recipe: Mini Strawberry Santas (Christmas)

We saw a photo of these Mini Strawberry Santas on Instagram and thought we could make it at home too. And so can you ;) It is easy to put together (no cooking required!), looks great on the table and will make a great pre-dessert on Christmas Day.

For our version, we used strawberries, whipped cream and fondant to create our Mini Santas. Ours look kinda rustic, as we simply used a spoon and toothpicks to put it all together. For a more polished looking Santa, you can pipe the whipped cream. These are something your kids can help with too - our kids help us roll out the fondant eyes. You can also use chocolate chips or raisins for the eyes, if you like.

Mini Strawberry Santas
Recipe by Baby Sumo
Preparation time: 10 minutes
Serves 4

Ingredients
250g strawberries
100ml whipping cream
1-2 tbsp icing sugar
Black fondant (for eyes)


1. Cut the top off the strawberries. Make sure it is cut straight so that they can stand upright.

2. Cut about 1/3 from the pointy-end (this will become Santa's armies "hat).

3. Roll fondant into small beads for Santa's eyes.

4. Using an electric mixer, beat whipping cream until stiff peaks. Add the icing sugar and beat until incorporated.

4. To assemble, place whipped cream in between the strawberries using a small teaspoon. Alternatively, you can pipe the whipped cream for a more polished looking Santa. Using two toothpicks, place another "dot" of whipped cream on the pointy end for the top of Santa's hat.

5. These has to be kept in the fridge or served immediately after making.

Note: Kids can help with the whipped cream as well as rolling of the fondant eyes.
